An exciting and tasty vegan take on the traditional chili potato dish, with spicy and tangy fried potatoes covered in a sauce.
Ingredients: 4 medium potatoes, diced. 2 tbsp cornstarch. 1/4 cup vegetable oil. 1 onion, sliced. 3 cloves garlic, minced. 1 bell pepper, sliced. 2 green chilies, sliced. 2 tbsp soy sauce. 1 tbsp tomato paste. 1 tbsp sriracha sauce. 1 tbsp maple syrup. Salt to taste. 1/4 cup chopped green onions, for garnish.
Instructions: In a bowl, toss diced potatoes with cornstarch until evenly coated. Heat vegetable oil in a skillet over medium-high heat. Add the coated potatoes and fry until crispy and golden brown. Remove and set aside on a paper towel-lined plate. In the same skillet, add a little more oil if needed. Saut sliced onion, minced garlic, bell pepper, and green chilies until softened. Add soy sauce, tomato paste, sriracha sauce, maple syrup, and salt to the skillet. Stir to combine and let it simmer for a couple of minutes. Return the crispy potatoes to the skillet and toss to coat them in the sauce. Garnish with chopped green onions and serve hot. Enjoy your delicious vegan chilli potato!
