Ingredients: 4 large potatoes, thinly sliced. 1 onion, thinly sliced. 3 tablespoons butter. 3 tablespoons all-purpose flour. 1 teaspoon salt. 1/2 teaspoon black pepper. 1 1/2 cups milk. 2 cups shredded Cheddar cheese.
Instructions: Grease the slow cooker with butter. Layer half of the potatoes and onions in the slow cooker. In a saucepan, melt the butter over medium heat. Stir in the flour, salt, and pepper until smooth. Gradually add milk, stirring constantly until thickened. Pour half of the sauce over the potatoes and onions in the slow cooker. Layer the remaining potatoes and onions on top. Pour the remaining sauce over the top. Cover and cook on low for 6-8 hours or until potatoes are tender. Sprinkle with shredded Cheddar cheese during the last 30 minutes of cooking.
