This ranch pasta salad without meat is delicious and filling, and it's easy to make. You can eat it for lunch or as a side. It has lots of fresh vegetables and a tangy ranch dressing that doesn't have any dairy in it.
Ingredients: 1 pack shirataki noodles. 1 cup cherry tomatoes, halved. 1/2 cup cucumber, diced. 1/4 cup red onion, thinly sliced. 1/4 cup black olives, sliced. 1/4 cup fresh parsley, chopped. 1/4 cup almond milk. 1 tablespoon apple cider vinegar. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. 1/4 teaspoon dried dill. Salt and pepper to taste.
Instructions: Follow the directions on the package to cook the shirataki noodles, then drain and rinse them well. Cherry tomatoes, cucumber, red onion, black olives, and parsley should all be mixed together in a large bowl. To make dairy-free buttermilk, mix almond milk, apple cider vinegar, garlic powder, onion powder, dried dill, salt, and pepper in a different bowl. Toss the salad well with the dairy-free buttermilk substitute after adding it. Put it in the fridge for at least 30 minutes so the flavors can mix before you serve it.
