Ingredients: 2 cups fresh strawberries, diced. 2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, melted. 1/4 cup vegetable oil. 2 large eggs. 1/2 cup milk. 1 tsp vanilla extract. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt.
Instructions: Preheat your oven to 375F 190C and line a muffin tin with paper liners. In a large mixing bowl, combine the diced strawberries and 1/4 cup of granulated sugar. Let them sit for about 15 minutes to release their juices. In another bowl, whisk together the melted butter, vegetable oil, eggs, milk, and vanilla extract. In a separate bowl, sift together the flour, remaining 1/4 cup of sugar, baking powder, baking soda, and salt. Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in the strawberry mixture. Scoop the muffin batter into the prepared muffin tin, filling each cup about 3/4 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
