Maybe the 17th century Auvergne scenes was so short, choppy, loud and chaotic because it was framed as Lestat's nightmare or did we forget that immediately after the flashbacks Lestat startles awake screaming his mom's name. Those scenes were not meant to show an 100% accurate picture of what happened back then but rather how Lestat *feels* living in that place. He felt trapped, overwhelmed, angry, emotionally neglected, scared, abused, and it's very much shown in the way the scenes are chaotic, filled with people shouting over eachother.
