Our coffee

Troubardour Coffee is honey processed, a unique and signature Costa Rican method in which the coffee cherries are sun-dried without washing off the sticky-sweet outer layer of the fruit (mucilage). Honey processed coffees tend to have a striking sweetness due to the amount of time the beans get to spend with the mucilage. Those caramelized sugars seep in during fermentation and drying and impart a great sweetness and mellow acidity with fruity undertones that dramatically enhance the natural flavors of our coffee. The honey process is kind on the environment because it uses much less water than the traditional washed process (lavado), and also saves on fossil fuels because it is sun dried and manually implemented on site at the farm.

Any coffee brewing process that skips or hurries steps has a bad exchange rate. Each minute you save on a quick-brew method costs you rich flavors, textures and smells from your coffee. You're essentially stealing from yourself. Quick coffee is bad coffee. The art of making great coffee is about understanding that preparing the coffee is part of the experience which begins when you open the bag to smell the beans, it's there when you grind the beans and smell the oils and scents, it's there when the water lands on the grounds making it bloom causing the beans exploding with flavor as the steam dances on your face.
