It shows the difference in lean tissue (muscle mass) in a sedentary mature male, versus that of an age group triathlete. The dark areas are lean tissue. Even if your body weight remains unchanged, your body composition can change dramatically. Low levels of lean tissue can lead to a number of health concerns from low bone mineral density, to chronic pain, to metabolic disease. The best ways to maintain metabolically active lean tissue as we age, and reduce the risk of chronic illness, are to exercise regularly (ideally including progressive resistance training) and to eat adequate amounts of protein.
