For those who grill using charcoal- do you grill directly over the charcoal or off to the side?
I've seen some people talk about this recently but apparently a lot of people do not grill directly over the charcoal for... reasons

Depends on application but for your typical kettle style grill like a Weber, its usually off to the side. Even chicken wings, cooked hot and fast with a vortex thing, the charcoal goes in the middle in the vortex and the wings on the outside ringed around it.
Thicker steaks you want to reverse sear, cook over indirect heat until just shy of target temp then blast the sides with heat over the coals, flipping often until crust forms.
Thinner steaks you want to cook at hotter temps, so a skirt steak you can just go right over the coals and flip often.
Smoking is more or less all done indirect to draw smoke over the food.
