M U T I A R A Mutiara is Pearl is Malay. Tonight’s dishes live up to it's name. Uncle told Chef Roy @mutiara_restaurant he wanted to come in for a soup. The soup he served is the best - a tofu chicken soup that has all the trimmings of shitake mushroom, zucchini, green pea, egg flower and the flavour defining zha cai (Sichuan preserved mustard plant stem). The soup is drizzled with chilli bean oil. The steamed tofu with phoenix field mushroom is vegetarian. The mushroom is called Feng Wei, the ghost/devil mushroom. The sauce is mushroom based too. To finish off, Uncle had Air Bandung (sirap Bandung), an iced drink popular in Southeast Asia and Indian subcontinent. It consists of evaporated milk flavoured with rose cordial syrup which gives it an alluring pink colour.
