Ingredients: 4 large eggs. 1/4 cup almond flour. 1/4 teaspoon baking powder. Salt and pepper to taste. Fillings of your choice e.g., spinach, cheese, avocado, bacon.
Instructions: In a mixing bowl, whisk together eggs, almond flour, baking powder, salt, and pepper until well combined. Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter. Pour 1/4 cup of the egg mixture into the skillet, swirling to spread evenly into a thin layer. Cook for 1-2 minutes until the edges start to lift and the bottom is set. Carefully flip the egg wrap and cook for an additional 1-2 minutes on the other side. Remove from the skillet and repeat with the remaining egg mixture. Fill the wraps with your desired fillings, fold, and enjoy!
