In my headcanon Zephon and Melchiah are the most drastically different from their human selves, though I'll only go into Zephon because Melchiah isn't as fleshed out in my mind.
It's understood that Raziel's brothers received a "poorer portion" of Kain's soul and were reborn weaker as a result. For Melchiah this resulted in continuous decay. In Zephon's case the damage was both mental and spiritual. He awoke an animalistic creature with no memory of human language. Even the concept of clothing was foreign to him.
But Kain expected Zephon to learn quickly, so he adapted. Despite his lack of understanding he possessed a wicked intelligence and keen observational skills that allowed him to catch up with his older brothers. His brothers always found him strange.
It wasn't Zephon's nature that made him cruel. His older brothers mocked him relentlessly and Kain treated him as a nuisance and a burden. Zephon clawed out a place for himself near the bottom of the hierarchy. Trickery, fear, and cunning would be his weapons.
There's a lot I could say about Sarafan Zephon. In short he was soft-spoken, courageous, hardworking, somewhat secretive, and obsessed with appearances in a neurotic way. If Zephon met his former self he'd find him extremely boring and irritating. Vampire Zephon is proud of who he's become, what he's accomplished, and would be offended that some pathetic human is using his name and likeness to uphold the values of some stupid false god or whatever the fuck. Vampire Zephon doesn't do weird existential gymnastics like Raziel. He'd lob a couple insults and get straight to the killing.
