Also i made a really good dinner of burrata, sweet corn, and basil ravioli with a tomato cream sauce, roasted broccolini, and garlic bread.

Here's a little pre-Christmas tip if you feel like trying our traditional spice cake! 😛

The fab thing about this creation is that you don't need any electrical appliances! Everything is mixed together by either a basic spoon or a wooden one. 🤷🏼‍♀️

1st: mix 2 eggs with 3 dl sugar.

Then melt 175g butter and add to the mixture along with 2dl Nordic sour cream.

(Now, the one we use is not the regular kind of sour cream so I don't know if regular works, but I don't see why it wouldn't. Ours is a bit runnier and lighter than regular sour cream tho. 🤷🏼‍♀️)

Then mix all dry ingredients in a separate bowl: 4.5dl wheat flour, 1 teaspoon baking powder, 1 ts baking soda, 2 ts cardamon, 2 ts cinnamon, 1 ts ginger and 0.5 ts clove.

Then dump the dry mix into the other bowl...

... and mix by hand until even. 💪

Then you pour it in a buttered and breadcrumb'd round baking pan or whatever the hell these things are called, and let your oven do its magic for roughly 1h at 175°c on the lowest oven grid or whatever it's called, I dunno. 🤷🏼‍♀️

Tip! ⚠️

Keep an eye on the situation and if the top seems like it's turning too dark even before 1h is up, put a tin foil on top to keep it from burning!

And while we wait...
