Ingredients: 2 cups of fresh corn kernels. 1 1/2 cups of cherry tomatoes, halved. 1/2 cup of red onion, finely chopped. 1/4 cup of fresh cilantro, chopped. 2 tablespoons of olive oil. 2 tablespoons of fresh lime juice. Salt and pepper to taste.
Instructions: Put the fresh corn kernels, cherry tomatoes, red onion, and cilantro in a large bowl and mix them together. To make the dressing, mix the olive oil and fresh lime juice in a separate small bowl. Add the dressing to the salad and mix it all together. Add pepper and salt to taste.
