Being a Watcher, Grian is completely deaf because Watchers didn't evolve to have any type of ears as they primarily live in the Void where sound cannot travel. As such, he relies on an old Watcher spell in order to 'hear' things. The spell isn't great but every Hermit knows the universal sign language so it's not a major. Etho is teaching everyone Japanese sign language because Grian is most familiar with it.
By the same logic of sound not traveling in the Void, Xisuma is partially deaf and more sensitive to sound after spending nearly three years in the Void trying to become the best admin he could be. Keralis made him his helmet after learning about that to help him readjust to being back in the Overworld. Xisuma found it so sweet he now refuses to take his helmet off.

Grian used to have a biting problem as a kid. As in he bit in self-defense.
This occasionally resurfaces. Joel, Martyn, Ren, and Xisuma have all been victims. The new Watcher teeth do not help.
