A tasty Thai-style salad with soft shredded chicken, mixed greens, and a tangy dressing made from soy. This salad is full of different tastes and textures! It has crunchy peanuts and wonton strips on top.
Ingredients: 2 cups cooked chicken breast, shredded. 4 cups mixed greens e.g., lettuce, spinach, arugula. 1 cup red bell pepper, thinly sliced. 1 cup cucumber, julienned. 1/2 cup carrots, julienned. 1/4 cup fresh cilantro leaves, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup unsalted peanuts, chopped. 1/4 cup crispy wonton strips. 2 tablespoons sesame seeds. For the dressing:. 3 tablespoons soy sauce. 2 tablespoons rice vinegar. 1 tablespoon honey. 1 tablespoon fresh lime juice. 1 clove garlic, minced. 1 teaspoon fresh ginger, grated. 1 teaspoon sesame oil.
Instructions: In a large salad bowl, combine the mixed greens, shredded chicken, red bell pepper, cucumber, carrots, cilantro, and mint. In a small bowl, whisk together the soy sauce, rice vinegar, honey, lime juice, minced garlic, grated ginger, and sesame oil to make the dressing. Pour the dressing over the salad and toss everything together until well combined. Sprinkle chopped peanuts, crispy wonton strips, and sesame seeds on top of the salad for added crunch and flavor.
