Ingredients: 1 whole leg of lamb. 4 cloves garlic, minced. 2 tablespoons olive oil. 1 tablespoon fresh rosemary, chopped. 1 tablespoon fresh thyme, chopped. Salt and pepper to taste. 1 bottle red wine, preferably a robust Cabernet Sauvignon. 1 cup beef or lamb broth. 2 tablespoons butter. 2 tablespoons all-purpose flour.
Instructions: Preheat the oven to 350F 175C. In a small bowl, mix together minced garlic, olive oil, rosemary, thyme, salt, and pepper to create a marinade. Rub the marinade over the leg of lamb, ensuring it's well coated. Let it marinate for at least 30 minutes. Place the marinated leg of lamb in a roasting pan and pour the red wine and broth over it. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness about 145F 63C for medium-rare. Once roasted, remove the leg of lamb from the oven and let it rest for about 15 minutes before carving. While the lamb is resting, make the gravy. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until lightly browned. Gradually whisk in the juices from the roasting pan along with any remaining wine and broth mixture. Cook until the gravy thickens, about 5 minutes. Carve the lamb and serve with the red wine gravy. Pair with a glass of the same Cabernet Sauvignon used in the recipe for a perfect pairing.
