Ingredients: 1 cup cooked quinoa. 1 can 15 oz black beans, drained and rinsed. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/2 cup fresh cilantro, chopped. 1/2 cup corn kernels fresh or frozen. 1/4 cup red bell pepper, diced. 1/4 cup green bell pepper, diced. 1/4 cup feta cheese, crumbled. 1/4 cup roasted sunflower seeds. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. 1 tablespoon honey. 1 teaspoon ground cumin. Salt and pepper to taste.
Instructions: In a large salad bowl, combine the cooked quinoa and black beans. Add the cherry tomatoes, red onion, cilantro, corn, red bell pepper, and green bell pepper to the bowl. In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey, ground cumin, salt, and pepper to create the dressing.
