My comment of the day comes from Rebecca: Comment: “My husband is 1/4 Icelandic, so we had an Icelandic heritage night with our kids this past weekend. My daughters and I made your recipe. Our whole family loved it- thank you so much for sharing the recipe!” This vintage recipe is very special and came to me by my neighbour! It was her grandma’s recipe from the 1800s. The recipe was written in the typical brief fashion of the day without much detail (swipe to see original recipe) as to what the method might me. As a writer and developer of recipes, I happily took the challenge on to make the recipe user-friendly. I am so glad that I did - this cake is as delicious as it is attractive, it is a perfect make-ahead and it freezes well.
