A colorful and healthy quinoa primavera dish with Parmesan cheese on top and lots of different colored vegetables. A healthy dish that is quick and easy to make and tastes great.
Ingredients: 1 cup quinoa. 2 cups water. 2 tablespoons olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, thinly sliced. 1 zucchini, diced. 1 cup cherry tomatoes, halved. 1 cup broccoli florets. 1/2 cup frozen peas. Salt and pepper to taste. 1/4 cup grated Parmesan cheese. Fresh basil leaves for garnish.
Instructions: Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed. In a large skillet, heat olive oil over medium heat. Add onion and garlic, saut until softened. Add bell pepper, zucchini, cherry tomatoes, broccoli, and peas. Cook for 8-10 minutes, or until vegetables are tender-crisp. Stir in cooked quinoa and season with salt and pepper. Top with grated Parmesan cheese and garnish with fresh basil leaves. Serve hot and enjoy!
