So I promised my version of Menudo so here you go π - Now this isn't a every day meal but you can freeze it in portions and it's just as good every time. So what do I do different to make this a little more healthy and carb friendly? #VGSTips: Try to cut out as much fat, sodium and carbs as possible. 1) Use honey comb tripe it's less fatty then flat tripe and I thing it taste better too. 2) Use Reduced sodium beef stock to help add flavor with out the salt. 3) Use Pork neck bones in place of the feet. It's less fatty and because it's a neck muscle more lean and the flavor is amazing when slow cooked. Little bites of deliciousness π 4) Use white hominy it has less calories and carbs then yellow 5) Add salt at the very end and do so sparingly because it's packed with a lot of flavors that have been layered throughout cooking. 6) Not really a tip but you can easily half this recipe as well if your just making a smaller amount. Ingredients: About 6 lbs of Honeycomb tripe ( remember it does cook down), 1 pack of pork kneck bones the meatier the better, 1 can of white hominy, 1 box of reduced sodium beef stock, Fiesta Brand Menudo mix about 6 oz, 3 TBL spoons cumin/comino, 1 pack of Mexican Oregano 1/4 oz, 1 large white onion chopped, 4 TBL spoons minced garlic, 2 TBL spoons Knorrs beef bouillon, 2 TBL spoons of dried cilantro, 3 TBL spoons Onion & Garlic powder & 3 TBL spoons canola oil.
