This Keto Veggie Tian is a delightful medley of thinly sliced zucchini, yellow squash, eggplant, and bell peppers baked to perfection with savory garlic, thyme, and Parmesan cheese.
Ingredients: 1 medium zucchini, thinly sliced. 1 medium yellow squash, thinly sliced. 1 small eggplant, thinly sliced. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 tablespoon olive oil. 2 cloves garlic, minced. 1 teaspoon dried thyme. Salt and pepper to taste. 1/4 cup grated Parmesan cheese. Fresh basil leaves for garnish.
Instructions: Before you start cooking, heat the oven to 375F 190C. Add the sliced vegetables to a large bowl. Add the minced garlic, dried thyme, salt, and pepper. Toss the vegetables until they are well covered. Spread the seasoned vegetable slices out in a baking dish or cast-iron skillet so that they overlap. Grate some Parmesan cheese on top of the vegetables. Put foil over the dish and bake for 25 minutes. Take off the foil and bake for another 10 to 15 minutes, or until the cheese is golden brown and the vegetables are soft. Before serving, sprinkle with fresh basil leaves.
