Adding zucchini bars to your dessert is a great way to sneak in some vegetables. The rich and nutty flavor of the browned butter frosting goes well with the spiced and moist bars.
Ingredients: 2 cups grated zucchini. 2 cups all-purpose flour. 1 cup granulated sugar. 1/2 cup brown sugar. 1/2 cup vegetable oil. 2 large eggs. 2 teaspoons vanilla extract. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/2 cup chopped walnuts optional. 1/2 cup raisins optional.
Instructions: Set the oven to 350F 175C and heat it up. A 9x13-inch baking pan should be greased and floured. Grate the zucchini and mix it with the vegetable oil, eggs, and vanilla extract in a large bowl. Combine well. You will need to sift the flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg together in a different bowl. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. If you want, you can fold in chopped walnuts and raisins. Spread out the batter in the baking pan that has been prepared. In a hot oven, bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean. Before frosting, let the bars cool all the way in the pan on a wire rack.
