Ingredients: For Pierogi Dough:. 2 cups all-purpose flour. 1/2 cup warm water. Pinch of salt. For Filling:. 2 medium sweet potatoes, peeled and diced. 1/2 cup cooked kasha buckwheat groats. 1/4 cup chopped parsley. Salt and pepper to taste. For Vegan Kielbasa:. 4 vegan sausages of choice. 1 tablespoon olive oil. For Serving:. Vegan sour cream or yogurt. Chopped chives for garnish.
Instructions: To make the pierogi dough, mix flour, warm water, and salt in a bowl until it forms a dough. Knead for about 5 minutes, then cover and let it rest for 30 minutes. Boil the sweet potatoes until tender, then mash them in a bowl. Mix in the cooked kasha, chopped parsley, salt, and pepper to make the filling. Roll out the pierogi dough on a floured surface and cut out circles using a cookie cutter or a glass. Place a spoonful of the sweet potato-kasha filling in the center of each dough circle.
