Ingredients: 2 cups elbow macaroni. 2 cups peeled and diced potatoes. 1 cup diced carrots. 1/2 cup nutritional yeast. 1/4 cup refined coconut oil. 1/4 cup unsweetened almond milk. 2 tablespoons lemon juice. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1/2 teaspoon turmeric powder. Salt and pepper to taste.
Instructions: Boil macaroni according to package instructions, drain, and set aside. In a pot, boil potatoes and carrots until tender. Once cooked, transfer potatoes and carrots to a blender along with nutritional yeast, coconut oil, almond milk, lemon juice, garlic powder, onion powder, turmeric powder, salt, and pepper. Blend until smooth and creamy, adjusting consistency with more almond milk if needed. Pour the cheese sauce over the cooked macaroni and stir until well combined.
