A more thorough rendition of today's veganized krispie treats. The only differences between these and "traditional" treats are that (1) these are vegan (duh) and (2) the marshmallows require just a bit more care. 1. Yes, I wrote it the recipe down in case I was distracted. (We were watching UFC at the time.) 2. Measure out the marshmallows. I scored 2lbs of discounted (read: non-square scrap cuts) Sweet and Sara marshmallows online. Last time I used a bag of Dandies. You'll need 10oz by weight either way. 3. Melt 3T of your butter replacement of choice over low heat. Mine is Earth Balance. 4. Staying over low to low-medium heat, add your marshmallows, stirring (and kind of mashing) occasionally. You don't want them to burn or toast because they won't combine right with the cereal. 5. You already measured out 6c of crispy rice cereal of choice, right? 6. Just like how you greased your 8x12 (or whatever floats your boat) pan of choice before you started as well, right? 7. Once your marshmallows and buttah have thoroughly melted together into one big puffy blob, don't wait - go go go! I added mine to a large bowl containing be cereal, then folded them in as carefully as I could, spilling a very minimal amount of cereal on the counter in my excitement. Press into the greased pan, allow to cool briefly (if you have the patience,) cut, cram into your craw, and enjoy!
