A delicious vegan twist on the classic caramel popcorn, inspired by the flavors of Twix candy bars.
Ingredients: 1/2 cup popcorn kernels. 1/2 cup vegan butter. 1 cup brown sugar. 1/4 cup maple syrup. 1/2 tsp salt. 1/2 tsp baking soda. 1 tsp vanilla extract. 1/2 cup dairy-free chocolate chips. 1/2 cup chopped almonds.
Instructions: Warm the oven up to 120F 250C and put parchment paper on a baking sheet. Use your favorite method to pop the popcorn kernels, then put them in a large bowl and take out any kernels that didn't pop. Put the vegan butter in a saucepan and melt it over medium-low heat. Add the salt, maple syrup, and brown sugar and mix well. Bring the mixture to a boil, then lower the heat and stir it every now and then for 5 minutes. After taking it off the heat, add the baking soda and vanilla extract and mix them in. Be careful because the mixture will start to bubble. Add the caramel to the popcorn and mix it around to cover it all. Place the popcorn on the baking sheet that has been prepared. Bake for 45 minutes, stirring the popcorn every 15 minutes. Take out of the oven and let cool all the way down. Take the dairy-free chocolate chips and melt them in the microwave or over a double boiler. Then, pour the chocolate over the popcorn. Put the chopped almonds on top of the chocolate and wait for it to set before you serve it. Enjoy your Twix caramel popcorn without the eggs.
