Tried vegan Mac and cheese. Bought vegan cheese for the first time. Mac and cheese was meh and the vegan cheddar cheese was very meh.. probably won't make or buy again lol. I had to try though! I'll see soon how those couple other cheeses taste... I couldn't finish my bowl of Mac and cheese though so I had a Gardein vegan bbq pork pocket instead. So much better. Maybe I should just leave these vegan remakes to the professionals

Sunday I made these buffalo chickpea taquitos. They turned out alright, but for some reason I have no idea how to work corn tortillas..? I guess from now on I'll stick with what I know, flour lol. Because even trying to roll these things they were already falling apart. This recipe came with making a cumin ranch sauce which I liked a lot better than the dill ranch I made with the fried mushrooms on Saturday. This is something I'd maybe make again except with flour tortillas
Yesterday I threw some of my left over veggies in the freezer. Except for the butternut squash, I double wrapped the others in plastic wrap in portions and then all of them are in freezer safe bags. I don't know if this is going to work.. but we'll see.
