Vegetable Uttapam/ Uttapa/ Pancakes These luscious savoury thick pancakes made with a Rice - Lentil fermented batter & topped with available fresh veggies are an absolute family favourite 😍 The batter I make is a very similar recipe to dear Kripa’s @sonshine_and_sparkles except that I sometimes add leftover cooked rice instead of Rice Flakes/ Poha 🍚 Swipe to see photos of the fluffy batter 👀 Toppings used here are, 1 Carrot, grated 🥕 2 different coloured Capsicum, diced 🫑 Red Onion, chopped 🧅 Green Chilli, minced finely 🌶 Fresh Curry Leaves, from my tree 🌿 🥰 Very adaptable recipe with adding in other veggies like Beetroot or Spinach, or leaving out the onion, on top of the pancake.
