Ingredients: 1 whole chicken about 4-5 pounds. 1 gallon water. 1 cup kosher salt. 1/2 cup brown sugar. 1/4 cup soy sauce. 1/4 cup apple cider vinegar. 2 cloves garlic, minced. 1 tablespoon black peppercorns. 1 tablespoon dried thyme. 1 tablespoon paprika.
Instructions: In a large pot, combine water, kosher salt, brown sugar, soy sauce, apple cider vinegar, garlic, black peppercorns, thyme, and paprika. Stir until salt and sugar are dissolved. Place the whole chicken in the brine, ensuring it is fully submerged. Refrigerate for at least 4 hours or overnight. Preheat your smoker to 225F 107C. Remove the chicken from the brine and pat it dry with paper towels. Place the chicken on the smoker rack and smoke for approximately 3-4 hours, or until the internal temperature reaches 165F 74C.
