I was watching videos at work and... I stumbled across an episode of #gordonramsay #ultimatecookerycourse with this bomb looking creamy mushroom and leek pasta with tarragon. Naturally I thought "I can make that vegan!" So I had to tackle two ingredients I've never used before: leeks and tarragon. Although it's not as creamy as I would've liked (vegan problems 😒 I thought if I reduced it with almond milk...anyway let's not get into that. Long story short, I should've bought that tofutti not cream cheese cream cheese. Lesson learned) I really appreciate the flavor profile. Idk if it was the hunger or the fact that it was bomb, but as I type this now, this bowl of pasta is being digested.
