Someone please write a fanfic about Winnie confronting Gilbert about Anne at the fair and she bluntly asks what his intentions and feelings are for her, then Gilbert says that she is beautiful and smart and easy to get along with and he likes her friendship, when Winnie--who is much more mature and experienced than this country boy--saying, "Oh, Gilbert. if you likes the easy things, you will not be a doctor."

There was a difference between Winnie and Anne's response to Gilbert's doubts about his vocation to become a doctor. Winnie said comfortable, easy things he might want to hear; "But I know for certain that whatever you choose to focus your passion on the next, the world will be better for it."
But is this comfort and convenience what Gilbert needs? Look at his face from that scene. I think he knows from the start that being a doctor is difficult and it is easier to just be a farmer, but he does it anyway. He knows bringing Bash to Avonlea will not be rainbows and sunshine, but he does it because it's his brother. Gilbert knows the price and hardships that must be paid for beautiful things to be worthy.
Anne, Anne who knows, who has become his friend, his best friend even, says something different. "I hope you never have to do something like that again, but I don't think you'll be able to avoid it. People will come to you, Gilbert. And they will bring their children, and everyone they hold dear, to see a doctor who cares just as much as they do. You will be a wonderful doctor. Caring deeply will always be the right thing."
I think this dialogue shows so much of Anne's understanding of who Gilbert is. This is what he needs to hear while still making his feelings of sadness and frustration valid. Does delivering death sentences hurt? Yes, and that was part of the reality of Gilbert's dream. Anne helps him realize that it will hurt, maybe forever, that's okay to feel it, but it is a part of his vocation that he can't avoid forever if he wants to help people.
