Wash 1 lb. beans. Place in a large pot, add 4 cups water. 1Tbsp salt. Soak overnight.
In the morning, drain and add: 4 cups water; ham hock or bone or pieces of ham. Simmer slowly for 2 1/2 to 3 hours, then add: 1 large onion chopped, 1 large can tomatoes, 1 large pod red pepper or 1 tsp. chili powder, juice of 1 lemon, salt, and pepper to taste. Simmer at least 30 minutes longer.
