Turkish rocket has really become a favorite spring vegetable, and I look forward to it even more than asparagus! It does take some tricks to grow and prepare. It does have a strong nutty, spicy arugula flavor, and some plants will be more bitter than others. So one trick is to keep the best tasting plants, and then feed them well, because large, fast growing plants will be more tender, and even less bitter. When it comes to serving it, it's probably a love-it or hate-it vegetable. As with asparagus, its strong flavor means it doesn't go well with everything. Risotto, flavored with red wine is one perfect accompaniment to my taste buds.
