A hearty and flavorful one-pot dish made with ground turkey, vegetables, pasta, and spices that are based on Mexican food. It is cooked in a tasty broth and then topped with melted cheese and fresh cilantro.
Ingredients: 1 lb ground turkey. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 cup corn kernels. 1 can 14.5 oz diced tomatoes. 1 can 4 oz diced green chilies. 2 cups chicken broth. 1 cup salsa. 1 teaspoon chili powder. 1 teaspoon cumin. Salt and pepper to taste. 8 oz rotini pasta. 1 cup shredded cheese. Chopped fresh cilantro for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Break up the ground turkey with a spoon as it cooks until it turns brown. Put in the bell pepper, onion, and garlic. Cook the vegetables until they get soft. Green chilies, chicken broth, salsa, chili powder, cumin, salt, and pepper should all be stirred in. Bring to a boil, then lower the heat and let it cook for 10 minutes. Follow the directions on the package for cooking the rotini pasta until it is al dente. Add the shredded cheese and mix it in until it melts and is well mixed in. Add chopped cilantro as a garnish before serving.
