An excellent substitute for scrambled eggs is this vegan tofu scramble. Both vegans and non-vegans will find it to be a satisfying breakfast or brunch option because of its high protein content and savory flavors.
Ingredients: 1 block extra firm tofu, drained. 2 tablespoons nutritional yeast. 1 tablespoon olive oil. 1/2 onion, diced. 1/2 bell pepper, diced. 2 cloves garlic, minced. 1 teaspoon turmeric. 1/2 teaspoon cumin. Salt and pepper to taste. Fresh parsley or green onions for garnish optional.
Instructions: Using your hands, crumble the tofu into a bowl, resembling the texture of scrambled eggs. In a small bowl, mix the nutritional yeast, turmeric, cumin, salt, and pepper. Heat olive oil in a skillet over medium heat. Add diced onion, bell pepper, and minced garlic to the skillet. Saut until softened, about 3-4 minutes. Add the crumbled tofu to the skillet and sprinkle the spice mixture over it. Stir well to combine. Cook for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden. Taste and adjust seasoning if needed. Garnish with fresh parsley or green onions if desired.
