Experience the fusion of Vietnamese and French cuisine with this Tofu Bahn Mi sandwich. Crispy toasted baguette filled with marinated tofu, crunchy vegetables, and a zesty vegan sauce, delivering a megabite of flavor.
Ingredients: 1 baguette, sliced and toasted. 200g extra firm tofu, sliced and marinated. 1 cup shredded carrots. 1 cup sliced cucumber. 1/2 cup chopped cilantro. 1/4 cup sliced jalapeos. 4 tbsp vegan mayonnaise. 4 tbsp soy sauce. 2 tbsp rice vinegar. 2 cloves garlic, minced. 1 tsp ginger, minced. 1 tbsp sesame oil. 1 tbsp sriracha. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. Place marinated tofu slices on a baking sheet and bake for 20 minutes, flipping halfway through. In a small bowl, mix vegan mayonnaise, soy sauce, rice vinegar, minced garlic, minced ginger, sesame oil, and sriracha to make the sauce. Spread the sauce on toasted baguette slices. Layer baked tofu, shredded carrots, sliced cucumber, chopped cilantro, and sliced jalapeos on top of the sauce. Season with salt and pepper to taste. Close the sandwiches and serve immediately.
