Ugh the ToEN ros climbing their ways up to the fine af scale and yanking my heart outta my chest by following the mc around a lot in the game, i'm repaying the heart wrench by asking how the ros (even the immortal and magical ones for this sake of this ask) how would they react if mc died?

That's a very particular question, and I have to say I haven't thought about that when I was working on the game. MC's death meant the end—at least mechanically—so I didn't put that aspect into my lore building. But! I can figure it out now. Let's see.
I think we would be dealing with two types of reactions here. Those ROs that are immortal, would be focusing on what they need to do to bring MC back, while the other two would be dealing with their own feelings of loss and failure.
Menkaure would be devastated (in both versions), but he wouldn't give up. He'd try to contact Ra and bring MC back, and—at least in my opinion—he would likely succeed.
Apepi would turn to dark magic and raise MC back from the dead, but there's no saying how well that would work. Apepi isn't really a necromancer. He likes chaos and freedom, not death.
Persenet would be heartbroken, but she would have to accept MC's death. She's not a sorceress or a priest, and she would have no way to bring MC back to life. She wouldn't forget about MC, though. She'd be excited about reconnecting with them in death.
Myrine/Zephyros would probably focus more on their job as a merc. They would take more risks, and—in the end—they would probably end up dying an early death because of that.

I'm not sure which projects you're talking about, so I'll try to give you my thoughts on all (?) of them. Well, I will put aside anything related to Qevox and Sekherion.
For Temple of Endless Night, I had some ideas, but they were never strong enough to overshadow the primary idea. I wanted to explore the temple back in the day (when it was still ruled by actual priests of Amun), and I also wanted to push the narrative a few years into the future, which would connect it to a bigger plot (Aqenenre's return).
I never really had any interest in exploring the story in modern times, but I suppose some of the characters could still work.
Now, the Hidden Sanctum is harder to explain because, in a way, the current version is already an AU of my original idea (and I don't mean the Hikaru>Odyss change).
The Hidden Sanctum was originally supposed to be a very different story, and your MC was supposed to be dead. I wanted to explore the idea of what happens to a soul when it dies. Each LI was meant to be a separate route, and I wanted each route to tell you more about the setting. Completing someone's route would be the same as learning what happened to them (the LI) and exploring their death.
I also had this dark, evil entity planned, but I won't say anything else about that, as I've used some of these ideas in the current version of the Hidden Sanctum.
