You're darn tootin' • Long overdue cook for the hosts of The Starting Lineup, Will West and Tyler Ivens, on Sports Animal 99.1 FM in Knoxville, TN • All night smoke on these Tennessee Beef short ribs from Simpson's Meats in Knoxville. • Trimmed, sprayed with Duck Fat Spray, base rub of Traeger Blackened Saskatchewan, secondary rub of Whiskey Bent The Grind, and a generous top layer of Reload Magnum. Super Smoked at 225° on my Traeger Ironwood 885 until internal temperature reached 165° then double wrapped in butcher paper and bumped to smoker temp to 265° to finish at an IT of 204°. Rewrapped, coolered, and brought to the radio program remote site at Frazier's Carpet One on Oak Ridge Hwy in Knoxville. Sliced and served to my favorite morning radio show hosts. • These guys have kept me sane in my extensive work travels; listening to their podcast on the road keeps me in touch with home and satisfies my sports fix all while definitely making me laugh a lot.
