Glad to hear you had a great weekend. :) I had a great one too. As for what I like about The Mentalist, pretty much everything you just said. Lisbon, Jane and Cho are my favourites. Love Jisbon, I think they're one of the best slow burns on TV. I really love the chemistry between the team (CBI & FBI). what's a Jisbon moment you think is underrated? A moment you love but you feel is hardly talked about?

i will never shut up about 6x10 generally, but i really really love the moment when jane's buying a hotdog and then kim comes up and tells him to leave it. he pushes back and then eventually looks at lisbon who gives him a 'give it up' look and then he drops it. i just love that she's his only moderating influence, and i think he was playing it up here to make sure he could get both of them a job together.
the volker arc, but i especially love the look on jane's face when lisbon finally asks for his help. no pushback, no equivocating. he's basically been a dog that's been leashed, and he's thrilled to be let at someone who it hurting lisbon.
somehow i don't feel like we talk enough about how in 3x24 jane literally stopped breathing when he was on the phone with lisbon until she says she's gonna be okay. and then they just breathe over the phone together for like 30 seconds? insane. i think he would've walked into oncoming traffic if she had died there. and the fact he takes a moment to calm down, that he has to, when obviously this is prime Red John time is such a sign of his priorities. and then when he asks her to get the phone, she drags her bleeding body across the floor to help him? they're so unhinged about each other.
when there's a bomb in that one house, i think in s2, and jane lays into her and orders her to leave the house? also an early moment where he shows deep concern for her and her well being that he kinda lets his easy going persona drop.
when they are talking to that one girl who was human trafficked in s6, and lisbon promises they're going to punish the perpetrator? and jane's just like 'well she promised so we have to' -- and then that carries through to them psychologically torturing the guy? they can be at odds about how to handle a case, sure, but deep down i think that they end up having a remarkably similar sense of justice. lisbon's gets a little more loose, and jane understands lisbon's boundaries and knows how to push her up to them but not beyond them. anyways i just love it.
