Homemade Re-Fried Beans
So I decided to try and make re fried beans. You know because I am trying to eat less meat, and beans are a great source of protein. I LOVE re frieds, but hate all the hidden ingredients and preservatives that the canned store ones contain. So I challenged myself to invent my own. I read a whack of different pins, blogs, and cook books and came up with this...
Take 1lb dried pinto beans and put them in a slow cooker with 6 cups of water. 1 finely diced jalapeno and 2 small onions 1 ish tbsp on chili power about the same of cumin powder. Really anything you like with beans Cook on high 5 hours on high. Remove the extra liquid and then use those fun handy immersion mixer things. Add any liquid back if you think you need to, and then salt to taste.
Then get fancy and make some different meals from it.

Second week back onto blogging and I forget everything!!! Well let’s start the third week out a little better!
This week my new recipe that we tried was this delicious crock pot balsamic chicken. Usually I change things up to make the ingredients super healthy and low in points, but this blogger did it all for me! Here is a link to her page.

As for my weekly goals...
I said I was going to take a new before picture. I say new because I had lost 50lbs! I found it really hard to enjoy beer and keep my weight down that low, so I gained about 5lbs back and was really happy. I was able to maintain a healthy weight, look fabulous, feel great in everything, and most importantly drink beer. I have started spinning, which is ammmmmmmmmazing. I have changed my legs and lower half of my body so much. However my stomach not so much. Christmas was very very fun, but I managed to gain 5 more lbs that don’t seam to want to leave. So that is why I am starting fresh. My new start weight is 150 and I would like to feel tighter then I am now. I don’t really care what the number on the scale says, but would like to feel the way I did at 145 and get my 4 pack back, and still drink a 6 pack. Cheers to a new journey! I have taken the picture, however not sure how comfortable I am to post it. I have known other bloggers that had their pictures stolen from here from drug companies and that scares me!
But I have them as my desktop and will start working on some change!!!!

New week new things to try.
Lately I am having so many thoughts about sustainable eating. Really I want to buy a piece of land and have a whack of happy little chickens, and a whole field of basil plants. However being that I have not quite won the lottery yet, I am here trying to do my part on eating sustainable. I have become a flexitarian. I eat meat, yes. Not everyday. With that being said today we had sloppy lentils.
Also turns out I should follow some photography blogs on here. *Note to self take photos that are not blurry*
Here my version of the meatless dish
Sloppy Lentils:
1 cup uncooked lentils
1.5 cup chopped onion
15 oz can diced tomatoes
1/2-1 (6 ounce) can tomato paste
2 cloves garlic, minced
1/2 cup ketchup
1 teaspoon mustard powder
1 tablespoon chili powder
3 tablespoons molasses
1 Tbsp white vinegar
salt and ground black pepper to taste
Cook onions in a large skillet over medium heat until the onions have softened about 4 minutes. (Most people fry in oil, however I use water. Less points!)
Add tomatoes, garlic, tomato paste, ketchup, mustard powder, chili powder, molasses, vinegar, salt and pepper; simmer 5 to 10 minutes until thickened.
You then cook the lentils separately.
And them all together and serve and enjoy.
