oh man u have opened up a can of worms
so i'm assuming u mean canonverse!merlin which will make this easier
but for one thing i bet he hums to himself as he's like. picking herbs and cleaning and stuff because he absolutely loves hearing the music playing when he's serving at balls or dinners and the like and maybe he's not such a great singer (i can't decide if i'd rather him be fantastic or utterly terrible tbh) but that doesn't stop him from humming nonstop and then arthur's like "for GOD'S SAKE, MERLIN, SHUT UP" because merlin hums while he does everything
and i also bet that when he gets time he likes to chat with the other servants and learn about their lives and check up on them because he's a nice guy and he genuinely cares about all of them and wants to make sure they're doing alright
uhhh god if i had the capability for higher brain function right now i'd probably have more
oh!! i bet he loves to play with the village children. or he used to. he's absolutely gonna be great with children and they adore him so he makes snowmen with them and keeps them occupied for their mothers when they need to go do something or shop or w/e
