The best parts of muffins and doughnuts come together in these Glazed Doughnut Muffins, which are a delicious treat. They are soft, moist, and covered in a sweet vanilla glaze that makes them impossible to resist. They're great for breakfast or a sweet snack.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 tsp ground nutmeg. 1/4 cup unsalted butter, melted. 1/2 cup whole milk. 1 large egg. 1 tsp vanilla extract. For the Glaze:. 1/4 cup unsalted butter, melted. 1/2 cup powdered sugar. 1/2 tsp vanilla extract. 2-3 tbsp milk.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground nutmeg. In a separate bowl, combine the melted butter, milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Spoon the batter into the muffin cups, filling each about two-thirds full. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean. While the muffins are baking, prepare the glaze. In a small bowl, whisk together the melted butter, powdered sugar, vanilla extract, and enough milk to achieve your desired glaze consistency. Once the muffins are done, remove them from the oven and allow them to cool in the muffin tin for a few minutes. While the muffins are still warm, dip the tops into the glaze to coat them evenly. You can dip them once for a light glaze or twice for a thicker glaze. Transfer the glazed muffins to a wire rack to cool completely. The glaze will set as the muffins cool. Enjoy your delicious Glazed Doughnut Muffins!
