This Slow Cooker Lemon-Garlic Chicken is a delicious and healthy option for those managing diabetes. The flavors of lemon and garlic infuse into the tender chicken breasts, creating a satisfying and flavorful dish.
Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup low-sodium chicken broth. 3 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon dried oregano. 1/2 teaspoon dried thyme. 1/4 teaspoon black pepper. 1 lemon, juiced and zested. 1 tablespoon cornstarch optional, for thickening.
Instructions: Olive oil, dried oregano, dried thyme, black pepper, lemon juice, and lemon zest should all be mixed together in a small bowl with a whisk. Pour the lemon-garlic mix over the chicken breasts that are in the slow cooker. Put the lid on top and set the heat to low. Cook for four to five hours, or until the chicken is tender and cooked all the way through. Take the chicken out of the slow cooker and set it aside if you want to. Add a tablespoon of water to a small saucepan and stir in the cornstarch until the mixture is smooth. Pour the liquid from the slow cooker into the saucepan along with the cornstarch mix. Stir the sauce all the time over medium-low heat until it gets thick. Pour the thickened sauce over the chicken when it's ready to be served. Have fun!
