This recipe for quinoa with grilled summer squash and green beans is a tasty and healthy way to enjoy the tastes of summer. Ingredients: 1 cup quinoa. 2 cups water. 2 summer squash, sliced into 1/2-inch thick rounds. 1 cup green beans, trimmed. 2 tablespoons olive oil. 1 lemon, juiced and zested. 2 cloves garlic, minced. Salt and pepper, to taste. Fresh basil leaves for garnish.
Instructions: Run cold water over the quinoa and let it drain well. Bring 2 cups of water to a boil in a medium-sized saucepan. Add the quinoa, then turn down the heat, cover, and simmer for about 15 minutes, or until the quinoa is soft and the water is absorbed. Take it off the heat and cover it for five minutes. Use a fork to fluff it up. Warm up your grill or grill pan over medium-high heat. Season the green beans and summer squash with salt, pepper, lemon juice, and lemon zest. Toss them together in a bowl. Put the vegetables that have been marinated on the grill. Cook for three to four minutes on each side, or until they have grill marks and are soft but still a little crunchy. Take it off the grill. Put the cooked quinoa and grilled vegetables in a large bowl and mix them together. Throw it all together well. Add fresh basil leaves on top and serve hot.
