This Raw Corn and Avocado Salad is a bright and healthy dish for a summer potluck. It has the sweetness of fresh corn, the richness of avocados, and a zesty lime dressing to go with it. This salad is not only tasty, but also beautiful to look at. It has red onion, cherry tomatoes, and bell peppers of different colors.
Ingredients: 2 ears of fresh corn, kernels removed. 2 ripe avocados, diced. 1/2 red onion, finely chopped. 1 red bell pepper, diced. 1/2 cup cherry tomatoes, halved. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh lime juice. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Put the diced avocados, finely chopped red onion, diced red bell pepper, and halves of the cherry tomatoes in a large bowl. Whisk the olive oil and fresh lime juice together in a separate small bowl to make the dressing. Pour the dressing over the salad and toss it gently to mix everything together. Add salt and pepper to the salad as needed. Put some chopped cilantro on top of the salad to make it look nice. Put the salad in the fridge for at least 30 minutes before you serve it so that the flavors can mix. Enjoy this great summer potluck dish while it's still cold!
