Enjoy the flavors of classic stuffed grape leaves in a dumpling form. These dumplings are filled with a flavorful mixture of rice, herbs, and nuts, then wrapped in tender grape leaves and cooked to perfection.
Ingredients: 1 cup short-grain rice. 1/2 cup chopped fresh dill. 1/2 cup chopped fresh mint. 1/2 cup chopped fresh parsley. 1/4 cup extra-virgin olive oil. 1/4 cup lemon juice. Salt and pepper to taste. 1 jar grape leaves, drained and rinsed. 1/2 cup water. 1/4 cup pine nuts. 1/4 cup currants. 1/4 cup finely chopped onion. 1/4 cup vegetable broth.
Instructions: Add the rice, dill, mint, parsley, olive oil, lemon juice, salt, and pepper to a large bowl. Set it aside. Combine well. Lay the grape leaves flat on a clean surface with the vein side facing up. In the middle of each grape leaf, put a small amount of the rice mixture. To make a dumpling, fold the sides in and roll up the leaf. Do it again with all of the grape leaves. In a big pot, stack the stuffed grape leaf dumplings with the seams facing down. Add the vegetable broth and water to the pot with the dumplings. During cooking, put a heavy plate or lid on top to keep them from coming apart. Keep the lid on the pot and cook on low heat for 30 to 40 minutes, or until the rice is done and the dumplings are soft. Toast the pine nuts in a small skillet until they get a little brown. Take the stuffed grape leaf dumplings out of the pot and set them on a platter to serve. Pour the cooking liquid over the top, and then add the chopped onion, toasted pine nuts, and currants. You can serve the Stuffed Grape Leaves Dumplings hot or at room temperature.
