Ingredients: 1 bunch fresh asparagus. 1 can black beans, drained and rinsed. 1 red onion, thinly sliced. 1 red bell pepper, thinly sliced. 2 cloves garlic, minced. 1 teaspoon cumin powder. 1 teaspoon chili powder. Salt and pepper to taste. 8 small tortillas. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 1/4 cup fresh cilantro leaves, chopped. 1 lime, cut into wedges.
Instructions: Trim the tough ends of the asparagus and cut into 2-inch pieces. In a large skillet, heat some oil over medium heat. Add the sliced red onion and red bell pepper. Saut for 2-3 minutes until they start to soften. Add the minced garlic, cumin powder, chili powder, salt, and pepper. Cook for an additional 1-2 minutes until fragrant. Add the asparagus pieces and cook for 4-5 minutes until they become tender-crisp. Stir in the black beans and cook for an additional 2-3 minutes until heated through. Warm the tortillas in a dry skillet or microwave. To assemble the tacos, spoon the asparagus and black bean mixture onto each tortilla.
