The freshness of spring rolls and the flavors of sushi come together in Spring Roll Sushi, making a delicious fusion dish. It's colorful, light, and great for a meal or appetizer that you want to cool off with.
Ingredients: 8 sheets of rice paper. 1 cup cooked sushi rice. 1 cucumber, julienned. 1 carrot, julienned. 1/2 red bell pepper, thinly sliced. 1/2 avocado, thinly sliced. 1/4 cup pickled ginger. 1/4 cup soy sauce. 1 tablespoon sesame seeds. Wasabi and/or sriracha for dipping.
Instructions: Prepare sushi rice according to package instructions and let it cool. Fill a shallow dish with warm water. Dip one sheet of rice paper into the water for 5-10 seconds until it becomes pliable. Lay the rice paper flat on a clean surface. Place a small amount of sushi rice in the center of the rice paper. Layer cucumber, carrot, bell pepper, avocado, and pickled ginger on top of the rice. Sprinkle sesame seeds over the fillings. Fold the bottom edge of the rice paper over the fillings, then fold in the sides, and roll tightly. Repeat with remaining ingredients. Slice the rolls into bite-sized pieces. Serve with soy sauce, wasabi, and/or sriracha for dipping.
