Dean's nicknames depend on how deep of a connection he has with someone. He's one of those people that have a wall up for a while, then when it crumbles, he's forever loyal to you unless something pivotal happens.
His baseline nickname is "sweetheart". We've seen him throughout the show refer to people with that name. It's quick and easy. Something he'll throw around when your budding relationship starts to bloom.
As Dean becomes more comfortable, he'll graduate to "babe" and "honey". These carry a heavier weight for him in his mind They're not something he'd call just anyone. Those names are reserved for quiet moments when it's just the two of you— breath mingling, hands gentle on your skin, kisses pressed to cheeks with reverence.
Dean is also definitely no stranger to nicknames when things get heated. He's a man who loves to make his girl feel good— physically and mentally. Praise is high on his list. "pretty girl" is his favorite to use when he's looking up at you, admiring the way your expression shifts as pleasure courses through your body. It's the same name he uses when kissing the tears away from your cheeks.
"baby" is used when he's in an argument. It's the name that falls from his tongue that's wrapped in frustration. He says it and inhales a breath to stay calm. It's his way to try and get through to you— now, what he's trying to get through to you varies. Maybe it's just a silly row about leaving the toilet lid up, or something about his hero complex.

Sam is a lover boy. He's using those puppy eyes on you whenever he possibly can!
In the beginning of a relationship, he's using words like "hun" or "sweetheart" to refer to his girl. Normally, those are said when his arms encircle your waist and his chin presses into your shoulder.
He uses "love" a lot. It's one of his favorites. When he gets comfortable, and realizes he's falling for you, it quickly becomes "love bug". If there's one thing about Sam, he adores a slightly cheesy nickname.
When referring to you, Sam can't help but be a little protective. The words "my girl" fall from his lips easily— second nature. Sam will even say it to your face. If you two haven't seen each other in a while—or even a few hours—he'll grin and say "there's my girl."
Sam uses "sweetie" too. I have no logical basis, it's just vibes. He's for sure a "sweetie" kind of man.
If things are getting heated, he pulls out all the nicknames listed above. He's so full of love for you that he can't shut up— and the best way to show his devotion is to shower you in sweet little pet names. For fun, he's tossed around "peach" before. Mainly to see if you'd like it!

Castiel spent most of his time with the Winchester brothers. He's picked up "sweetheart" from Dean and "love" from Sam. It took him a while to even feel comfortable using pet names— the concept was something unheard of in Heaven. So it took him a while to ease into it.
But once he's comfortable, good lord he doesn't stop.
His nicknames are swoon worthy for sure. Cas is calling you "dove" and "my love" on a regular basis. Though, he tries to stray from saying them in public. He believes that those words are meant for you and you only. So he doesn't want just anyone hearing them from him.
As he begins experimenting with certain things about humanity, such as his sexuality, he finds new nicknames to call you. sex is something he holds dear— looks at it as a way to blend two souls together.
It's no wonder when he kisses every inch of your skin, murmuring "my devotion" as he goes.
Cas is a "darling" man! It's used the most during arguments, all ranging from small to large. Though he hates to call them arguments. He opts for disagreements or moments to learn your thinking.

Ruby is using nicknames that bring out the giggly mess in anyone. She particularly likes the way you react to "vixen" whether it's good or bad.
She says "angel" a lot. Because she's a demon, there isn't much light or love in her life. But when she met you it all changed. You were like this shot of espresso or golden ray of sunshine that walked into her life. It was like she was seeing for the first time. So, she started calling you "angel" for being her saving grace.
When things are getting heated, she loves saying "sweet girl" and "pretty thing" to see you squirm. But she reserves "honey" for more tender moments.
"baby" and "babe" become part of her vocabulary. you make her want to be cheesy— even though she swore she'd never do it. You're just something she wants to adore and, much to her surprise, pet names were good ways to get her message across.
From time to time, she'll call you "little hellion."

Bella is british, so she's using "darling" and "love" like they're never going out of style. She uses them on a day to day basis, usually when asking you to hand something to her or when she's checking in to see how your day's been. They're always followed by a kiss pressed to your cheek.
She starts using "sweetness" after a few months of your relationship. Like Dean, Bella is one of those people who needs time to be fully comfortable and acclimated in life with someone. But when she opens up, she unfurls like a flower and dives right into it.
If she's with someone who's enthusiastic when things get heated, she uses teasing nicknames. "bunny" is a favorite of hers. Or even "bambi" if you can't walk properly afterwards. They're said with pure adoration, even if they make you fluster.
After watching Pride & Prejudice, she's adopted the use of "goddess devine" on very special occasions.

Jo loves elegance in simplicity. So "sweetheart" and "babe" are her favorite nicknames to call you. They're always said through veneration, a big smile, or through gentle giggles drifting through the air.
She doesn't just stick to those, no. It really depends on the situation. When she sees you across the bar, she's shouting "there's my girl." Or even "my lady" when she's being silly.
"pretty girl" and "silly girl" are a part of her top five.
When it's just the two of you, beneath moonlight, sharing a drink and listening to music, "carebear" falls from her lips. It's sweet and silly and she loves it. Jo usually does it when pinching your nose, barely able to contain her giggles.
When things are getting heated, a breathier version of "mine" sticks to the tension-filled air.
