Spicy Pita Pockets with Chicken, Lentils, and Tahini Sauce are a delicious and nutritious meal option. The combination of tender chicken, flavorful lentils, and creamy tahini sauce creates a satisfying and spicy twist on traditional pita pockets.
Ingredients: 2 boneless, skinless chicken breasts. 2 teaspoons olive oil. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. 1 cup cooked lentils. 4 whole wheat pita pockets. 1/2 cup tahini sauce. 1/4 cup chopped fresh cilantro. 1/4 cup chopped red onion. 1/4 cup chopped cucumber. 1/4 cup chopped tomatoes. 1/4 cup chopped green bell pepper. 1/4 cup chopped fresh parsley. 1/4 cup hummus.
Instructions: Preheat the oven to 375F 190C. Rub the chicken breasts with olive oil, paprika, cayenne pepper, salt, and pepper. Place the seasoned chicken breasts on a baking sheet and bake for 20-25 minutes or until cooked through. Let them cool slightly and then slice them into thin strips. Warm the whole wheat pita pockets in the oven for a few minutes until they are soft and pliable. In a small bowl, mix together tahini sauce and chopped cilantro. Open each pita pocket and spread a spoonful of hummus inside. Fill each pita pocket with sliced chicken, cooked lentils, chopped red onion, cucumber, tomatoes, green bell pepper, and fresh parsley. Drizzle the tahini sauce mixture over the filling. Serve the spicy pita pockets immediately and enjoy!
