Kombucha is a fermented tea beverage that's not only delicious but also rich in probiotics. It's naturally gluten-free and can be flavored with various fruits, herbs, and spices to create unique and refreshing drinks.
Ingredients: 1 SCOBY Symbiotic Culture Of Bacteria and Yeast. 1 cup of organic cane sugar. 8 cups of filtered water. 4 bags of organic black or green tea. 1 cup of starter tea previously brewed kombucha.
Instructions: Boil 4 cups of water in a large pot. Remove from heat and stir in the sugar until dissolved. Add tea bags and steep for 10-15 minutes, then remove them. Add remaining 4 cups of water to cool down the mixture. Once the mixture is at room temperature, pour it into a clean glass jar. Add the SCOBY and starter tea to the jar. Cover the jar with a clean cloth and secure with a rubber band. Store the jar in a warm, dark place for 7-10 days, tasting periodically for desired tartness. Once ready, remove the SCOBY and starter tea. Reserve 1 cup of kombucha for the next batch. Pour the kombucha into glass bottles and add flavorings of your choice see description for ideas. Secure the lids and allow the bottles to ferment for an additional 3-5 days at room temperature to develop carbonation. Refrigerate the kombucha to stop fermentation and enjoy!
